The cavernous, golden-lit eatery is helmed by executive chef Paul Turner, who emphasizes seasonal, no-waste cuisine. As part of your visit to The Madonna, you’ll also have access to a gin tasting experience with the Melbourne Gin Company. An independent distillery based between Collingwood and the Yarra Valley, MGC crafts its gins in old perfume stills, using local botanicals and rainwater for a Melbourne twist. The company has teamed up with Next Hotel Melbourne to create five signature cocktails, based on the ‘moods of Melbourne’. You can try them in the hotel’s Barrel Room, or dial ‘C’ (for ‘curious’) on your phone, and a bartender will come to your room to mix them up and explain each one. The ‘Curious Cocktail’ experience runs from 3pm to 5pm on Fridays and Saturdays in August.
